Diego Jacquet, CheF pATRON

Currently Chef Patron at London’s Restaurant ZOILO and boCHINche in Singapore, Diego began his career in Buenos Aires in 1993, when he joined renowned Argentine Chef Francis Mallman’s restaurant as an apprentice.

In 1998 he fulfilled his dream to cook in Europe when he joined the team of “Casa Nicolasa” in San Sebastian, Spain. To later took a position at the three Michelin star restaurant “El Bull” of Ferran Adria. In 2001, he decided to move to NYC to joined “Aquavit”, the award wining Swedish restaurant by Marcus Samuelsson.

Born in Buenos Aires, Argentina, Diego Jacquet spent most of his youth in Patagonia, where he discovered his love for food and wild products.

Sebastien guilleminault, general manager

Born in 1982 in Dreux, France. In 2002, Sebastien started an apprenticeship in Catering and Hotel Management at Michelin star Restaurant Copenhagen. In 2005 he left France for London to work under Fred Siriex at Galvin @ Windows as Assistant Sommelier.

Between 2007 and 2012, he managed the following Restaurants here in London, the Chancery, the Clerkenwell Dining Room (now closed) and La Cave in Borough Market (now Boro Bistrot).

In 2013, he met Chef Patron Diego Jacquet & started to work as ZOILO’s Restaurant Manager. Since 2016 Sebastien works very closely with Diego as ZOILO’s General Manager.

Gian Mario, hEAD Chef

Gian was born and raised in Sardinia, but moved to the UK in 2005 in search of opportunities to break into the food & drink industry. He always knew he wanted to be a chef, and kept his mind on that goal when starting out as a kitchen porter in a gastro pub.

Gian’s natural talent saw him quickly work his way up through the kitchens from porter to commie chef, and later chef de partie, in various gastro pubs. In 2012 he met Diego and soon joined the ZOILO team, where he has been ever since, now enjoying the role of Head Chef.
