Diego Jacquet, CheF pATRON
Currently Chef Patron at London’s Restaurant ZOILO, Diego began his career in Buenos Aires in 1993, when he joined renowned Argentine Chef Francis Mallmann’s restaurant as an apprentice.
In 1998, he fulfilled his dream of cooking in Europe, when he joined the team of Casa Nicolasa in San Sebastian. He later took a position at the Michelin three star restaurant El Bulli, under Ferran Adria. In 2001, he moved to New York to join Aquavit, the award-winning Swedish restaurant, run then by chef Marcus Samuelsson.
Born in Buenos Aires, Argentina, Diego Jacquet spent most of his youth in Patagonia, where he discovered his love for food and wild products.
Sebastien guilleminault, general manager
Born in 1982 in Dreux, France. In 2002, Sebastien started an apprenticeship in Catering and Hotel Management at Michelin star Restaurant Copenhagen. In 2005 he left France for London to work under Fred Siriex at Galvin @ Windows as Assistant Sommelier.
Between 2007 and 2012, he managed the following restaurants here in London: the Chancery, the Clerkenwell Dining Room (now closed) and La Cave in Borough Market.
In 2013, he met Chef Patron Diego Jacquet & started to work as ZOILO’s Restaurant Manager. Since 2016 Sebastien works very closely with Diego as ZOILO’s General Manager.
Gian Mario tOMMEACCIU, hEAD Chef
Gian was born and raised in Sardinia, but moved to the UK in 2005 in search of opportunities to break into the restaurant industry. He always knew he wanted to be a chef, and kept his mind on that goal when starting out as a kitchen porter in a gastro pub.
Gian’s natural talent saw him quickly work his way up through the kitchens from porter to commie chef, and later chef de partie, in various gastro pubs. In 2012 he met Diego and soon joined the ZOILO team, as CDP where he has been ever since, now enjoying the role of Head Chef.
Marko BAJAGIĆ, RESTAURANT MANAGER
Marko was born in Rovinj, Croatia. He graduated from Hotel Managment School in Zagreb. Always striving for excellence, after 7 years, he move to Dubrovnik to manage the restaurant Nautika.
Many food & wine awards later & having established it as one of the best fine dining destinations in Croatia, Marko decided in 2021 to moved to London and worked for Caprice Holdings on the Bacchanalia opening.
In 2023, he met Diego & immediately knew they shared the same ideas & vision for the industry.
His passion for music, food, wine and impeccable service makes him the perfect Restaurant Manager for ZOILO.
